Which cheeses are lower in cholesterol and/or fat?
My fiance and I love fine cheeses (both for general tastings and for cooking). I was planning on baking some portabello caps stuffed with toasted walnuts, oyster mushrooms, spinach and brie tonight (maybe some tomato as well) but brie is a little higher in cholestrol than I would like. Can anyone tell me which cheeses have (relatively) less cholesterol and/or fat (no "low-fat velveeta" please)?

- Mozarella and feta comes to mind. Gouda also.
- I think like the other poster said mozzerella is the lowest when it comes to melted type cheese. Pecorino Ramano and Parmigiano Reggino for grated.
- The harder the cheese, the lower the fat content for regular varieties. I believe goat cheese has less cholesterol than cow. Check this site for more info http://www.foodnetwork.com/food/lf_hl_low_cholesterol .
