  1. it's high cholesterol, but it's good
  2. Many people are confused about the fat and cholesterol content of shrimp. Shrimp is very low in total fat, yet it has a high cholesterol content (about 180 milligrams in 3.5 ounces, or 12 large boiled shrimp). Some people have avoided eating shrimp precisely because of its high cholesterol content. However, based on research involving shrimp and blood cholesterol levels, avoidance of shrimp for this reason does not seem justified. Shrimp's cholesterol is harder to absorb than that from other high-fat foods, although the reasons are not known. What you should do is use olive oil to sautee them with, add some chopped garlic, chopped parsley and lime juice to them. Or have some shrimp ceviche, it's not only healthy but you will eat a lot of tomatoes with it. Prep Time: 20 minutes Cook Time: 3 hours, 00 minutes Ingredients: * 3 lbs small raw shrimp, cleaned * 4 large tomatoes, seeded and diced * 6 limes, juiced * 4 lemons, juiced * 1 cup cilantro leaves, chopped * 1 serrano chile, seeded and finely chopped * 1/2 of a cucumber, peeled and diced * 1 red onion, diced * salt and pepper to taste * 3 tablespoons tomato sauce Preparation: Lay out shrimp in the bottom of glass baking dish. Pour lemon and lime juice over them and refrigerate for 3 hours. The juice will "cook" the shrimp. Toss with remaining ingredients and refrigerate for one more hour or longer. Enjoy with tortilla chips or as a topper for grilled fish!
